TIROLER GROESTL

For 4 persons

Ingredients:

  • 100 g onions, finely sliced
  • 450 g meat (can be a combination of roasts or cold cuts) cut into thin strips
  • 100 g bacon, finely chopped
  • 800 g of cooked potatoes cut into chunk or large cubes
  • salt and pepper
  • marjoram or caraway
  • butter or oil in which to saute ingredients
  • 4 eggs lightly fried (sunny side up!)
  • finely chopped parsley (garnish)

Preparation:

1.  Saute onion, bacon and potatoes with spices until onions and bacon are cooked.

2.  Saute meat lightly.  Add to potato mixture.

3.  Fry eggs sunny side up.

To serve:

Place groestl on plate.  Top with egg.  Garnish with chopped parsley.

This is a popular dish from Tyrol.  It is traditionally served with cabbage salad for lunch or dinner in the mountain regions.
